This is my variation of mücver – zucchini fritters but everyone who tried them says they taste really Turkish :) Best served hot and with fresh Turkish yogurt (greek yogurt and russian smetana will be also great to accompany this simple, yet great home snack).
The recipe is very simple, but be prepared that it will take time to fry the fritters, so use two frying pans, if possible – this way it’ll go faster.
- 2 large zucchini, peeled and grated
- 2 medium carrots, peeled and grated
- 3 tbsp grated onion (oh, how I cry at this point!)
- 1/2 cup white cheese (beyaz peynir or feta), crumbled
- 2 tbsp finely chopped dill
- 1/2 tsp dried mint
- 2-3 eggs, depending on size
- 1 cup all-purpose flour
- Salt and black pepper, to taste
- Olive oil for frying
*makes around 20-25 thin fritters
Use a large bowl. Combine grated zucchini, carrots and onion. Mix well. I usually wear kitchen disposable gloves and do all of the mixing by hand.
Add crumbled white cheese, eggs, chopped dill, mint, season with salt and pepper to taste (if you’re using feta keep in mind it’s quite salty). Mix. Lastly add flour and mix with a wooden spoon until all the flour had incorporated.
Heat olive oil in the flying pan until very hot. Take 1 tbsp of the batter per 1 fritter and flatten it on the pan so it’s thin. Fry on both sides until golden brown. Let them rest on a plate covered with a paper towel so it absorbs excess of oil. Change towels as needed. Continue until batter finishes, adding some olive oil to the pan as you fry the mücver, little by little.
Serve hot with yogurt on a side! Afiyet olsun!
