If you’re on a diet or in the beginning of a weight-loss journey, you will probably puzzle yourself with what to eat for breakfast. Well, at least this is my everyday problem. Health nutritionists say breakfast is the most important meal of the day, powering us with energy to go through the day and helping lose weight in a long-run.
For those who’s working, breakfast should be easy and fast to make too, especially in winter when we want to spend extra 5 or 10 minutes in bed under a warm blanket. I came across a recipe of an oat bran galette from Dukan Diet and I thought why not use it as a base, adjust to my taste and add to my breakfast recipes. It turned out great and it only takes 5 minutes to make.
- 1 egg
- 2 tbsp oat bran
- 2 tbsp greek yogurt 0% fat
- pinch of baking soda
- coconut flakes to taste
- dark chocolate chips to taste
Lightly beat 1 egg, add oat bran, soda and yogurt, mix until consistent. Add coconut flakes and chocolate chips. I think pure cocoa powder will work well too. In general there’s a great freedom to adjusting this recipe to your taste.
Spray your frying pan or lightly grease with couple of vegetable oil drops. I use a silicone brush to cover surface of the pan evenly and avoid excess of oil. Fry it over medium heat for a couple of minutes on each side as one big pancake or two smaller ones.
